To celebrate the New Year, Britain’s Daily Telegraph looked at up-and-coming food and drink for 2017. There were edamame noodles, poké, fresh turmeric root, pignoletto, mastiha and among other things that few have heard of, let alone tasted, was kombucha. This is a fermented tea which originated in the Far East many centuries ago. It supposedly has health-giving properties and your old editor has been making it at home for the last couple of years.
